White Pepper

Originally from India, pepper is grown in Brazil, Indonesia, Malaysia and India. It only grows in very hot and humid climates. There are different types of pepper on the market: white, black and green. They come from different stages of ripening of the fruit. White pepper is at the most advanced stage of ripening while green pepper is not ripe. The spicy taste of pepper is mainly due to a substance called piperine.

For white pepper, the very ripe fruit is picked and soaked in salted water to dissolve the outer black shell. The pepper then turns white and is dried. It is used mainly with pale meats and white sauces. Its flavour is more intense than that of black pepper, so it should be used in small quantities.
