
Cloves
Originally from Indonesia, clove is grown mainly in Indonesia, Brazil, Comoros, Madagascar, Malaysia and Africa, where there is a maritime or tropical climate. The cloves come from the flower buds that are harvested before flowering and then dried, which gives them their brownish colour. Cloves have a strong, pungent, spicy and astringent flavour. Ground clove is used in sausages, sausages, cheese heads, meat loaves and stuffings. It is also a good seasoning for marinades. During the cooking of hams, the flavour of cloves stuck on the outside is transferred to the meat. Cloves go well with cinnamon, nutmeg, ginger, cardamom, pepper, onion, bay leaf and garlic.
