Recipe:

For 5 lbs of meat: Use 180 grams (6,35 oz) of spices with 5 lbs (2,27 kg) of meat and fat. Add 2 lbs (900 ml) of water. Sear the meat with the water and cook, uncovered, at low heat for 2 hours. Add spices, mix and wait for 20 minutes.

For 28 lbs of meat: Use one unit of 0.92 kg (2.03 lbs) with 12.7 kg (28lbs) of meat and 3.6 kg (8 lbs) of cold water.
